House Of Flying Daggers blows Crouching Tiger Hidden Wires out of the water.

But Crouching Tiger revolutionalized the genre for the mainstream in Western Cultures, therefore rules out. I would argue the two other standouts to me in different contexts:

 

Once Upon a Time in the West-a three hour build up to a duel that has a quick action, but man!

Steven Spielberg's ...The Duel! Car. Truck. Movie long duel.

I agree with Wiseguy and Jackwagon.  I'd have also thrown in something from Kurosawa (though it'd take me a couple hours to choose one).

I'd also throw in Dutch vs. the Predator in the original "Predator."

Rocky Balboa vs. Ivan Drago in Rocky IV.  It ended the cold war!

Johnny Lawrence vs. Daniel LaRusso in The Karate Kid.  You know you were doing the crane kick after you saw it for the first time.

Mankind vs The Undertaker in the Hell in A Cell Match.  Sure it ain't a movie but it's on DVD and it's awesome yo!!

The Best Star wars Duel was in Revenge of the Sith, Between Yoda and The emperor.we waiting 6 movies for it and it did not disappoint.

I'd also like to add Halle Berry vs. Billy Bob Thorton in Monster's Ball and Angelina Jolie vs Antonio Banderas in Original Sin.

Good List but I'd have to put the final duel with Zorro (Antonia Banderas) vs Harrison Love (Matt Letscher) and Don Diego vs Don Rafeal at the end of "Mask of Zorro," as well as the Water wheel duel between Jakc Sparrow, Will Turner and the former Captain Norrington from "Pirates of the Carribean: Dead man's Chest" in as well.

 The greatest duel in movie history is between Zorro(Tyrone Power) and Captain Pasquale(Basil Rathbone) in The Mark of Zorro(1940). The swords crash together with such force and speed that you actually fear for the actors' safety. The end to it is also especially brutal and coldblooded.
