It seems to me that the Sunflower has some sort of significance in the Japanese culture...does it? And if it does, what's its significance?

well, yahoo has become a useless quaugmire for me anymore so I can't find the story, but the only one I'm familiar with is a story about a little girl who was killed in the Kobe quake and a sunflower grew on the spot where she died and then there were people planting them all over the country.
