Is all Viz shows 2.0 Audio? not 5.1 Audio?

If you mean does Viz punch up the audio to 5.1 like ADV frequently does, the answer is no, err..... yes. That is, most if not all of their shows appear to be in stereo only.
As far as I can remember, if their show comes in stereo, that's how they do it, English track included. Certainly, that's the case for their most recent properties, Naurto, Bleach, Inu Yasha, etc. And of course, their older properties like Ranma while officially stereo, actually are closer to mono for all practical purposes.
Their Inu Yasha movies, though are 5.1 digital. Not surprising since these are recent theatrical releases.

Thanks, though does this mean that it'll stay like that even with box set versions down the road? Just making sure.

Well comparing the one Naruto single I have to the boxset (the single was given to me), the audio on both are the same so I don't think they bump them up for boxsets.

The short answer is yes. Studio's rarely if ever make any significant changes between the singles and a subsequent boxset since there's no profit in it for them.
Of course, there are exceptions. Special editions like Pioneer's Tenchi Muyo Ultimate edition which had the stereo track punched up to 5.1 and Right Stuff's Tylor Ultimate OVA box (although I believe the sound is the same) which has loads of extras. But usually there are no significant differences.
However, if and when they acquire a new property that already comes with 5.1, they'll undoubtedly release it the same way. But at the moment, they don't appear to have any such coming down the pipeline.
