Shall I get a 20GB hard drive, 120GB hard drive or HD DVD player (I have some HD DVDs!)?

Do you like demos and videos? If so, the 120GB HDD is a must-have. Forget the 20.
My Elite came stock with the big drive, and I've already filled up half of it after six months.

If you have HD-DVDs and no HD-DVD player, then the add-on is something to look at.
There are tons of HD-DVDs on sale everywhere, so you should find luck.

Not to mention XBLA games and other gaming downloads (downloadable content, PSU's expansion) and/or if you're still playing FF XI (that'll take up a huge chunk of HDD space right there). Don't forget Champions Online coming down the road...
Yeah...I definitely need to upgrade to the 120GB myself.

120 GB hard drive. Pretty much the only point to having a 20 GB drive is if your 360 came with one, like mine did.

True but I can't bring myself to recommend to someone to pay $180 (holy shite Batman!) for 120 gigs. I mean c'mon, you can get a 500 gig hd for you comp on newegg for a bit over $100. It's insane. I've got a 20 gig on my 360 since it's a Pro and that's what it came with. I've dled tons of songs for Rock Band and GH 2 & 3 as well as demos, videos, etc and I still have space left over. That's the beauty of Live. Once you purchase something, it's yours. So if you run outta space and there's something you haven't or aren't going to play for awhile, delete it to make space. If you ever want to play it again, just dl it again at no extra cost. Simple as that.
So all-in-all I'd suggest getting the 20 gig hd ($100) and the HD DVD player ($50) for less ($150) than what the 120 gig hd will cost you alone ($180). That way you can save/dl some stuff as well as watch those HD DVDs you own instead of rebuying them on BD down the road. I've got several HD DVDs I still enjoy and will continue to do so with my 360 HD DVD drive.

You know with all the fighter games DOA IV, Virtual Fighter V, [I]Street Fighter II′: Hyper Fighting, Fatal Fury Special, Ultimate Mortal Kombat 3 and upcoming fighters like Soul Calibur IV, Street Fighter IV, Samurai Shodown II, Soul Calibur, and Mortal Kombat vs. DC Universe. Add to the arcade games like Pac-Man: CE, Frogger, Joust and of course shumps like Ikaruga and Trigger Heart Exelica. Maybe you should think about a Hori arcade stick, they are about $50 but I hear they are a decent stick without getting something custom made like from Arcade-In-A-Box (http://www.arcadeinabox.com/scripts/prodView.asp?idproduct=42), with look to run you well over a $150.

I know. That's the only reason I don't have one. I might have to suck it up eventually though, since Microsoft is dumbasses and won't let you use any external hard drive.
I only have a handful of games and I've only got about 6 GB left on my 20 GB hard drive. I've only had it since February. Granted, I've got 3 games that are rather hefty on the DLC (The idolm@ster, The Idolm@ster Live for You, and Rock Band), but otherwise all I have are 2 more games and some Live Arcade games. I don't really keep many demos or movies sitting around either.

Got my brother the Turtle Beach Ear Force X1 and been pretty happy with it. Its wired but it works better then the wireless version and is holding its value more then X2.

I'd say you should be fine with the 20Gb HDD. I mean, that's what I have and I have a lot of game saves, XBLA games, a few videos, a ton of iMAS DLC and I've still got around 9Gb free.
Having said that, I may buy either an Elite or a 120Gb HDD later in the year, but for now I'm happy with my 20Gb.

I'm surprised that a third-party hasn't come up with a 2.5" HDD enclosure that fits on the xbox in the same way that the original version does.

You can pry open the HDD enclosure and insert your own drive without too much difficulty. The problem is replicating the key file that the 360 uses to recognize the HDD. Each drive has its own specific file which includes information on the drive's maximum capacity. So you can take two 20GB X360 HDDs, and both will have slightly different key files. Neither of these key files can be transferred to a 120GB drive.
Even if you get a 120GB drive to transfer a key from, the 360 will see the new drive as a clone of the previous one. You've got to start with a Microsoft key file, which means you need a Microsoft 120GB drive. And if you've got that, you don't need to mess with custom enclosures and third-party drive swaps unless you're a backup diehard.

Elite definitely looks seductive in its sexy black. I might trade in my silver 360 & original XB for an Elite. Then I'd get a 120GB, new console set + warranty & clear some cupboard space. All depends on the trade-in Game offers. If I got £130+ for both, I'd be happy.
