What shows have flashbacks of (present time) older characters, when they were in their childhood &/or infancy?
What are the ones you liked most?

The show that comes to me first is One Piece, most major characters have a flashback to their, often crappy and depressing, childhood. But I think that's pretty common in Shouen.

Love Hina is the first that comes to mind. Fruits Basket and Fullmetal Alchemist are some other examples.

Since I've been on a Twin Spica kick, I'll add that to the list. Several full-episode flashbacks to various points during Asumi's childhood and some on Marika. The manga has even more, and throws in some for Fuuchuya.
Honey and Clover has a few, as well. Morita and Hagumi for sure, and I'm pretty sure Takemoto's made it in as well.
NieA_7 (since I'm thinking about it from another thread) has a couple brief flashbacks for Mayuko and Genzo.
Let's see... Patlabor has some for Noa, as I recall. Brief, but there. I don't think any of the others got one.
Fruits Basket has some for Honda, but this is another one I'm not sure how much of the manga made it in to the anime.
Berserk has one straight-up flashback for Caska. You might consider some of the Gutts/Gambino stuff flashback. Of course, almost the entire series is technically a flashback, so...
Kino's Journey doesn't really present it as a flashback, but there is that one episode that pretty much fits.
Revolutionary Girl Utena, like almost all the tropes it uses, has some fun with childhood flashbacks for several characters.
Aria has some of the three water fairies.
Crest of the Stars, even if you don't count the stuff for Jinto, has a great one of Lafiel's father introducing her to... well, if you've seen it, you know what I mean. Definitely a top choice. Banner continues this with a brief shot of Ekyuria being used as a Cat Condo.
Yawara! A Fashionable Judo Girl has some for Yawara that are pretty important.
Evangelion has some pretty creepy ones.
Glass Mask has some for Ayumi.
Really, these are pretty darn common in anime.

The ones that come to mind most for me, both recent and past are:
K-ON!- There are several amusing flashbacks to the childhoods of several of the characters, but the best has to be Yui's flashback to playing the castanets...
Urusei Yatsura- there are flashbacks aplenty, especially where Lum and the other alien girls are concerned. The best involve Lum's constantly getting the (at the time) very innocent Ran in trouble constantly.

Grumble Grumble Grumble
Both 'Madlax' and 'Noir' have main characters who uncover childhood flash-backs, as they seek and slowly uncover a tragic and forgotten past...

It's a key plot point for several characters in Ai Yori Aoshi
Gakuen Alice has some, though they don't have far back to go :)

Nadesico has a couple, mostly of Akito and Yurika. Ruri gets a whole episode about her past, and there's a brief flashback of a younger Ryoko and her father in another.

Looking for ones that don't would probably provide you with a shorter list :P
Some more that haven't been mentioned-
Gurren Lagann's brief flash to Simon's even younger childhood trauma
Ghost in the Shell SAC's quasi-flashback episode where Motoko hears the story of Kuze's youth(and strongly hinted at being part of hers too).
Birdy the Mighty: DECODE's various flashbacks to Birdy's past, including a pair of episodes in season 2 that thoroughly explain things and (broadcast animation aside >_>) is one of my favorites
And just to get it out of the way, almost any harem/romance show involving a childhood friend/girl from their past.

Shuffle had some of the more surprising examples of this.

-Cowboy Bebop did a great twist of this, by having Faye's flashback be shown on a video instead.
-Most shonen series are a given. If you're a series like FMA, Naruto, One Piece, etc., except some tears to begin falling during most flashbacks. I'm also extremely displeased the next Tsubasa OVA has chosen to skip two arcs, since Fay's flashback may be of the most devastating ones I've ever seen.
-Evangelion did an interesting version, by showing parts of Asuka's past through her mindrape sequence and then showing more through a normal flashback.
-School Rumble never made me teary, until the final Season 2 episode's flashback. Poor little Tenma. :(
-Baccano didn't really have flashbacks proper given its nature, but it did have one for Nice that was pretty shocking.
-There's one in Betterman, but I'm having trouble remembering the specifics. IIRC, the one woman is remembering her childhood and these creepy little children in shadow are dancing around here and taunting her. Pretty unsettling.
-The one at the end of Paranoia Agent (where Tsukiko actually watches her own flashback) always makes me teary.
