What are the differences between these three shows? I remember Voltron obviously, and vaguely remember Tranzor Z, but don't remember Mazinger Z.

Tranzor Z is essentially a localized version of Mazinger Z released in the U.S. long ago. The type of localization where things get changed. As for more specific details than that, I'll let someone else talk about it.

Like Suika said, Tranzor Z was the American release of Mazinger Z. I'm sure there were edits and changes, but I don't really know the details.
Voltron was the American release of a show named GoLion, and is much, much more popular in America than it ever was in Japan.
On the other hand, Mazinger Z is THE most famous Super Robot in Japan. It basically created the genre.

There's also the Voltron series based on Dairugger XV aka Vehicle Voltron.

I remember watching few eps of both Voltron & Tranzor Z long time ago when i was a kid. While i wouldn't consider them perfect localized shows (compared to the current localization) but when you compare them to many others shows that were heavily molested at that time (regardless of how successful they were) i guess these two would among the least molested ones.
While i wouldn't recommend watching the US version of these shows to new fans, many who grew up watching them (or some of them) might find some nogelistic* value in watching few eps at least.

The most memorable part of "Tranzor" is when the narrator says Baron Ashura (or "Devileen") is "a shemale. Half man half woman. The worst of both!"

Never saw an episode of Tranzor Z but I saw episodes of Mazinger Z in english(dubbed in Philippines in the 70's but that was old).
But Voltron is the best(the Lion and Vehicle Team series).

Well, as all have stated Tranzor Z was the localized version of Mazinger Z by the guys at 3B productions (The guys that did StarBirds - the edited movie version of Tosho Daimos), basically it was cut down from 92 episodes to 65, the fanservice and the bloody violence was cut from the episodes used, almost all of the scenes of Aphrodite A / Diana A breast missiles attacks were taken out too and the names, soundtrack and SFX were changed and redone and some footage of Great Mazinger was inserted in the Prof. death speech on episode 1...
You can check the crazyness of Tranzor Z on this podcast (http://www.collectiondx.com/blog_entry/destroy_all_podcasts_dx/destroy_all_podcasts_dx_episode_37_tranzor_z_a_pil ot_is_found_the_kid_becomes_a_hero) about the Tranzor Z movie
As Most ppl know Lion / Vehicle Voltron are the localized versions of Beast King Golion / Armored Fleet Dairugger XV except for taking footage from other episodes to cover the time lost due the edits for violence and death it works as described above.:blush1:

Voltron also has a unique place in anime history as the last 20 or so episodes of the lion team were ones that World Events paid Toei to create new animation which allowed WE to have scenes match scripts rather than the other way around and could continue their US story line. I believe this was the first time a US company had ever paid a Japanese company to create more animation for a show where none existed in Japan as the series had ended there years before-due to this there is no Japanese language track for these episodes.

and they also did that for Saber Rider and the Star Sheriffs.
