I was bored and wanted to post and talk about something other then Bushs' agenda as president. So what, did you guys have tonight for dinner?

I just had plain old homemade hamburgers and a salad. (I know, it is exciting!)

I went to Red Robin tonight and had a rare treat...BEEF.

Trying to eat more healthy, but once in awhile you just gotta say what the heck. So tonight I had a Burger with Bleu Cheese and a Chipotle Mayonnaise sause. YUM! :p

Going out tomorrow night too, but not sure what we'll be eating yet. One thing's for sure....Oatmeal with carob chips and walnuts in the morning, a Salad from Subway for lunch, and hopefully Sushi for dinner. :)

I pulled leftovers out of the freezer that I want gone in the next couple of days so I can make room for new goodies. So besides the meatballs, we'll be dining on beef stew and cheesy cauliflower soup.

I took my daughter and one of her friends to a favorite restaurant. When they were little, our families would meet there on Monday nights for "kids eat free" night.

I had a Turkey Reuben... turkey, provolone, Thousand Island dressing, and cole slaw grilled on rye with home made potato chips and ranch dressing.

Actually, I think they have 99 cents kids meals on Mondays now. Unfortunately, the youngest of the kids is mine and she'll be 15 on Monday, so we are waaaaaaaay past the whole kids meals thing.

Since the wife is still pretty well laid up, I'm doing the cooking. It's rough when I get home at 6 and then have to do the clean-up from the day and then make dinner, let the kids have playtime out side, give 'em baths, and then get them in bed by 9.
So it's been grilled cheese and spaghetti-o's one night, then I did breakfast another night...but last night, I did grilled salmon with lime, steamed broccoli, and pasta with alfredo sauce. Both the kids adore salmon and broccoli (I can't believe how much Mr. Noodle packed away).

We went out to this fantastic bar & grille. They have Woodchuck Cider on tap!!! Last night it was Woodchuck Dark & Dry--verrrrrry tasty.

Oh, and the food was great, too. Shrimp pita with bacon, tomato, greens, and a guacamole dressing, plus a side of greens with vinagrette. Then we decided to be naughty and have dessert: white chocolate bread pudding with peach-cranberry sauce. I'd never thought of mixing peaches and cranberries, but it was yummmmy.

Damn. Now I'm hungry.

Yeah that sounds pretty good. Tonight i am going to take my girlfriend out, she has had a rough day. She mentioned chinese food, which is always fine with me. So chinese food tonight, and i am going to order the Mongolian Beef with rice, i love that stuff, love it!!!

It is imitation crab meat and cream cheese deep fried in a wonton pastry. You dip them in sweet and sour sauce.


Very tasty and very bad for you.

They are very popular in chinese establishments in the mid-west. All the years I lived out west I never did see them.

Rice, broccoli, chopped carrots, cream o mushroom and chopped chicken. Putting into a pan and in the oven for about an hour, then graded cheese on top, putting back into oven for about 5-10 minutes and BAM, its done!. That is what i am having, and YAY, i get to make it too!!!

I usually don't make simple dinners, but if you switched out the cream of mushroom for cream of chicken, I'd totally eat that. Try adding a dash of curry.

I believe the orignial recipe did have cream-o-chicken but for the last couple times i had forgot and just purchased the mushroom stuff.

I saw that you had a cookbook thread going kah, i was wondering if you had any suggestions as to what to marinate some boneless breast chickens in? I have done some stuff but im sure you know that shit gets old, so curious as to what you thought.

Well, there are lots of pre-made marinade sauces out there, but if you want fresh ingredients I like orange juice and fresh grated ginger root. Simple but very tasty--good for chicken as well as salmon.

I find a zesty italian dressing is good for marinades. I also like using dill pickle juice, then serving it with a savory boxed rice dinner.

Death, just start throwing stuff in a bowl and taste it. If it tastes good, then it will make your meat taste good.

Start with soy sauce, worcestershire sauce, apple juice, red wine vinegar, basalmic vinegar, lemon juice, lime juice, etc. Add a little olive oil. Chop some garlic and scallions. It really depends on your tastes.

Lime juice with soy sauce and cumin is really good.

Red wine vinegar with olive oil and minced garlic.

Apple cider vinegar with brown sugar (or maple syrup), olive oil, and a drop of liquid smoke.

I just had white tuna with Vegenaisse on 2 crumpets with Vegetarian cheese melted on it. I had a third one, but it was on a piece of home made unleavened pan bread! :p

Went over to a friends house last night for a BBQ. Bad, just bad. I have had his BBQ before and it is actually really good, when he does not drink all day. He had been drinking since he woke up and by the time the BBQ started all he wanted was to eat. So after grabbing some chicken and I started to munch down on them, i realized that they were in fact, not cooked. And by not cooked i mean it still had the white skin on it, and everyone else was eating theres so i passed and had some potato salad that just had, potatoes in it. Good times, good times.

Yeah, it was great. Have you notcied that though, whomever is BBQin and drinking sometimes overcook or undercook things? That shit annoys me, it really does. It is 11:00 in the morning, do you have to drink?!?!? Clam down, smoke some pot and try not to drink untill the night! Damn, I think every BBQ i go to the damn cook is either on his way to being a full blown drunk, or already. Thats it, no more!

I skewered some pork chops and onions. I drizzled the onions with olive oil, then sprinkled kosher salt and cracked black pepper over them. The pork I blackened. I grilled them, and then served them with sliced tomatoes and fried potatoes. Taking a bite of pork, onion, and tomato is just to die for. :)

Letsee, this last weekend started with tri-tip steak, slow barbecued medium rare and tender and juicy, sliced to make either little sandwiches on rolls or wraps. I chose wraps, and added nice baby greens. Evening, I had a 2-inch thick filet mignon with sauteed onions, mushroom strips on top, and melted bleu cheese! :eek: !!!!!!!!! That was with steamed veggies and a baked potato. Talk about heavanly. :p :p :p :o

Last night I had simple.... pan fried (olive oil, herbs) zucchini from my backyard, home made cream corn, and a ground beef/potato stroganoff that used Ikea's instant Swedish Meatball sauce as the gravy, and all of it was put on homemade Norwegian potato pan bread....imagine the fluffiest flour tortilla in the world, and taking a magic carpet ride on it. :D

Tonight, I think it's going to be Louisiana hot links and little golden potatoes. :OhWell:

I did weigh myself over the weekend, and I am much lighter than I thought I was. :confused:

Last night I had stew meat cut up into cubed slices and added them into flour with an egg; cooked and then put into a big pan with 3 cans el pato sauce and two cans of tomatoe sauce, and stirred periodically for 3 hours. Once done, I made some white rice and added the chicano (what we call it) on the rice....spicey as the devils ass, but good.....that was a bad analogy, but it is spicey and I guess I am labeling the devil....:headscratch:

I made "chicken stuff" (that's the official recipe title): diced chicken breast sauteed in white wine, cream of chicken soup and a little chicken broth for sauce, then peas and rice mixed in casserole style.

Dessert was strawberry trifle, made with angel food cake, yogurt, whipped cream, and fresh strawberries from my parents' garden. Yummmmmmmm.

Last night I had grilled chicken and turkey habanero and chiles sausage on a toasted ciabatta bun with caramelized onions and a nice thick spread of home-made creamy dill mustard with capers. Actually, I had two, because it was so delicious.

Spaetzle

2 eggs
2 tablespoons oil
1/2 cup water
1/2 cup milk
2 1/2 cups all-purpose flour
2 1/2 teaspoons salt
1/4 teaspoon baking powder
boiling water

In a large bowl, beat together the eggs, oil, water and milk. In a separate bowl, stir together the flour, salt, and baking powder. Beat the dry ingredients into the liquid. Let the dough sit for a few minutes while you wait for the water to boil.

Put some of the dough into a colander and press it through the holes into the boiling water. (You'll probably have to make 3 batches.) They are done when they float to the surface. Scoop them out with a slotted spoon.

Potato Dumplings

2 cups mashed potatoes
2 cups flour
2 eggs (beaten)
1 teaspoon baking powder
1 teaspoon salt

Mix all the ingredients together with your hands and roll the dough out into a "tube" shape on a floured surface. Cut into 1" dumplings. Drop dumplings into a large soup pot filled with boiling water and boil 20 minutes.

Also known as gnocchi, basically. We made a ton of this the last time we made it. I've never made spaetzle before because I thought you needed that spaetzle thing-a-mah-jig to make good ones. If a collander is okay maybe I'll try to make some soon.

Pan-fried potstickers, made from scratch. :D Had them with two little dipping sauce bowls, one with soy, the other with sweet vinegar. :p

Also, hot-and-sour egg flower wonton soup, made with the same stuffing as the pot stickers. :D !!!!!!!!!!

I've had sandwiches for a week straight, except for the one time my roomie and I made it out of the dorm. That day I had extremely sub-par chicken fried steak which was nonetheless the best food ever after so many sandwiches.

Tonight... Lean Cuisine Pizza. I'm almost breaking a sweat just thinking about it.

You make a cake mix (I made white cake), bake it, poke it full of holes with a toothpick or fork, then pour dissolved jell-o over it (I used cranberry-cherry). Refrigerate 3 hours, then top with whipped cream. Yummy in summer.

Oh, you only dissolve the jello in boiling water, you don't go to the next step and add cold water like you would if you were making regular jell-o.

Here's a post from my blog:

On Tuesday night, I stopped on the way home to Kroger and bought a 4 pack of gorgeously chunky beef ribs. As soon as I got home, I added dashes of salt, freshly ground pepper, fresh minced garlic, and drowned them in Emeril's Ginger Teriyaki marinade. Stuck it in a tupperware, and waited.

The problem was that since I do not normally eat dinner at home with my wife due to my shift at work, I can only enjoy breakfast at home with her. So, throwing tradition to the four winds, I broiled the ribs this morning while preparing fresh cole slaw with salt, black pepper, white wine vinegar, mayonnaise, and grated carrots. Mixed it all up set it to chill in the fridge for an hour.

Slowly turned and kept an eye on the pieces of beef on the pan as they quickly browned with crispy edges, and in 15 minutes or so, they were done. Once I drew them out of the oven, I covered them in aluminum foil to keep the heat in, and at 9:30 in the beautiful AM, my wife and I had fall-off-the-bone beef ribs, cole slaw, and buttered bread for breakfast. I enjoyed mine with dabs of horseradish sauce and duck sauce, going back and forth between the two for each delicious bite. WOW. It was SO good.

I don't care what peope say, I'm having this supperfast again! And I am officially announcing that horseradish is now my new favorite condiment, and a must-buy at the next visit to Kroger.

That sounds completely delicious, but I want it now, not tomorrow morning. I can't stomach meat before noon.

Once, though, on a dare, I ate a Saltine cracker covered with horseradish. Like, liberally covered, not just a thin patina. It took me about an hour to breathe again, but I won the dare. And yet I still do like horseradish, especially in pub cheese, one of man's greater inventions. Cheese you can spread at room temperature! Is there any felicity in the world superior to this?

For dinner we went to the local steakhouse, and I had a medium rare steak with a baked potato. And their trademark garlic bread. :p :p

I made tilapia last night. I'm just learning to make fish (because I hate it). I know it's good for me, so I've been trying to incorporate it into our diet.

Last night I had a winner. I made foil packets and put them on the grill for 10 minutes. I laid the fish on top of lemon slices, sprinkled them with greek seasoning, and put a tiny dot of butter on the top. They were perfect!

Make quesadillas. You can buy precooked, spiced chicken, or just make cheese ones. Have them with fresh guacamole and lots of tomatoes, to up the veggie quotient.

I had a recipe for chicken and meatloaf in the microwave, but I haven't made them for a while. I think I actually have a book titled "365 microwave recipes" but I don't often use it.

These cookbooks were way popular during I think the 60s or 70s, or whenever the microwave was really gaining traction as an important kitchen item. I see them all the time in those bargain bin of used bookstores. Actually I wouldn't mind having such a cookbook handy, but as a regular book to peruse looking for something to cook, it's just too weird for me.

Woo! Right on. Spinach is very delicious and should be eaten three times a week in a variety of forms and meals. It's really easy to use frozen spinach in a lot of different recipes.

Oh but I haven't had spinach out of the can. And despite being Popeye's favorite way to consume spinach, it just seems a little gross to me. Is it floating in spinach liquid?

Yes, it is floating in spinach liquid. It essentially IS spinach liquid, or at least spinach... okay. I was in daycare by six weeks and stayed there until I was eight, and every day at EVERY DAYCARE I WAS EVER IN, our vegetable at lunch was canned spinach. And I swear that the cook just ate a couple pounds of inferior spinach, regurgitated it, and put it in plain cans. That's what it looked like and that's what it tasted like

That is what's wrong with canned spinach.

edit: how do you make wilted lettuce? I thought you just left it out. And then threw it away.

From watching my mom make wilted lettuce. You take lettuce fresh from the garden. Throw the leaves in a bowl. Fry some bacon. Crumble it up on top of the leaves. Take some of the bacon grease, vinegar and some sugar. Heat it up and then pour it over the lettuce. She also throws in some onions. It is great.

In fact, I can't think of a single vegetable canned that's edible....well, except for stewed tomatoes.

Frozen is better, but fresh is the best way. It's just a matter of cleaning it well.

When I cook spinach, it's right into a frying pan on some hot olive oil (just a wee bit), with a tiny bit o' garlic that's sauteed in it, and then add a couple squeezes of lemon juice on top, and let it cook down, stirring it every now and then, until it's cooking in its own juices, and then serve it up. :)

I love spinach omelets, frittatas, and fresh salad with spinach instead of lettuce. I even prefer to use spinach over lettuce on sandwiches or burgers.

There used to be one of those build your own pasta places in the food court underneath my work. That would have been awesome, I love pasta (convenient, seeing as I am dating an Italian) and I don't love Chinese food, which is all I have. Three greasy flaming wok wannabes, a Taco Time (or something like it), and a chocolate store. Not great dinner pickings, so I'm forced to eat at McDonald's... joy.

I've discovered this little pizza place next door though, run by a fat Greek guy. Guarantees deliciousness.

Wash that down with some free soda and popcorn...

Huh. My ex also didn't like every condiment. I, on the other hand, wouldn't mind having like ten different sauces and condiments to dip whatever it is that needs dippin'. As for gristle, there are times, few and far between but still it happens, when I just have to have the fat connected to that gristle and the grease coating all of that. :p It's really quite amazing I'm not overweight.

Hit the hippie organic vegan all-natural braless co-op last night. Say what you will about the kind of store that sells hemp shirts, but they do have some great stuff. Last night I had brie on crackers with a fresh pear for dinner, with local honey on a piece of wheat bread for dessert. I only wish they carried dairy stuff other than milk -- I think I bought fake butter and I Can't Believe It's Not Cream Cheese by mistake.

I put some baby back ribs (mostly frozen) in the slowcooker yesterday. I rubbed a mix of brown sugar, cayenne, chili powder, and garlic powder on them and cooked them on low for around 7/8 hours. (I would normally have used the oven, but I didn't want to heat up my house.) I threw them on the grill and basted them with bbq sauce. I served them with pan fried garlic potatoes and lemon pepper green beans.

A young, acidic varietal with an angular aftertaste. Too young. Its' balance was mediocre; but its' mood was rich.

After about four glasses, my mood was very rich.

I woke up on the bathroom floor around 2:34 with an empty bottle in my hand (along with an empty bag of Cheeto's).

For some reason you reminded me of the guys from Sideways with the talk about Australian Cabernet :lol: .........I need to try some of that stuff if it makes you wake up in the bathroom with a empty cheeto bag...:D

Deep Space Corn Bread

1 cup All-purpose flour
1 cup Corn meal
1/4 cup Granulated sugar
4 tsp. Baking powder
1/2 tsp. Salt
1 cup Milk
3 Eggs
1/4 cup Oil

Preheat oven to 500º. Mix dry ingredients together. Add the rest of the ingredients and beat with a wire whisk (or a spoon) until all lumps are gone. Pour into a greased and preheated iron skillet or a greased square pan. Bake until a knife poked into the center comes out clean (approximately 15 minutes).

Having once again made a sweeping decision to Get Healthy, I've realized just how futile that is in a college setting. Had to remind myself last night that two hundred-calorie packs of Chips Ahoy! was not dinner.

Today a NutriGrain yogurt bar is filling in as a slightly better brunch. I need more time and a kitchen. Kah, your book is helping, but lunch is really the hardest part. I've got a choice between pizza so greasy it glows in certain lights; simple-carbohydrate-dense Chinese foodl "the Chippery," which sells only cookies; and an Indian restaurant where the owner scares me. I think I may have to just invest in a lunch box. It'd probably be cheaper in the long run, too... hmm.

For a healthy lunch that's portable, I love a veggie wrap. If you have a fridge, you can keep all the necessary ingredients:

1 tortilla or similar wrap
2T hummus
2T guacamole (fresh avocado is better, but too much work if no kitchen)
carrots
fresh spinach
tomatoes (get grape tomatoes and no cutting involved)
and the key ingredient: sweet Thai chili sauce

spread the hummus & guac in the middle of the tortilla, drizzle chili sauce, add veggies, and wrap it up for yummy goodness!

Actually, I've been known to have these for dinner as well as lunch. You get all your daily servings of veggies in one meal, so you get a virtue buzz as well.

We're all about sandwiches here. It's usually peanut butter and jelly on whole wheat with fresh veggies or grilled cheese with tomatoes and bacon at home. We basically eat cereal for breakfast, sandwiches or leftovers for lunch, and then whatever we want for dinner.

I woke up at 8pm from my involuntary nap (thus missing the Wednesday recap show at Chaotic Radio :( ) and fried up a couple small Lamb Shoulder steaks in garlic, with some more giant fresh string beans and some steamed quinoa.

I've got a pork shoulder in the slow cooker right now. I rubbed a mix of brown sugar, paprika, chili powder, cayenne, garlic powder and black pepper all over it, then seared it in olive oil. I slapped it in the slow cooker on high, and after about 4 hours, I'm going to dump in half a can of Dr. Pepper and set it to low for another 6 hours. I'm going to make some maple butternut squash and green beans on the side.

I use a recipe for roast beef that is similar.

Tri-tip beef in a crock pot with one can of Coke, one package of Lipton Onion Soup, one small can of jalapeno peppers and let it cook on low for about 7-8 hours.

The beef flakes off into small juicy pieces and I serve it either on a tortilla or a hoagie roll with grilled onions, peppers and swiss cheese.

It was good. I think I cooked it a touch too long, though. I wanted the pork to stay a little more solid, but it fell apart when I pulled it out of the crock. I think next time I'll lay the roast on top of sliced yams, too, to keep it out of the juices. The squash was perfect, though. :)

Mmmm... taking advantage of my friends' absence from their apartment (and of course their hospitality and trust in letting me stay even when they're not here), I've made some pasta with shrimp and a sauce essentially made of butter, garlic and lemon juice. I was afraid the shrimp were going to be rubbery, but lo and behold, they're not, because I'm awesome.

Fricot a la Poule (Chicken Fricot)

1 chicken ( I used 3 boneless skinless chicken breasts)
2 Tbsp butter
1 large chopped onion
1 Tbsp flour
12 C water
salt and pepper
1 Tbsp summer savoury
5 C diced potatoes

1. Cut the chicken into large pieces.
2. Brown in butter, making sure all sides are golden brown
3. Remove chicken and saute the onion in the butter.
4. Add flour and saute the onion for another 1-2 min.
5. Add water, chicken, salt, pepper and summer savoury.
6. Simmer until chicken is tender (about 30 min).
7. Add potatoes and cook for another 17 min.

Don't forget the dumplings. :)

In a bowl, mix 1 C of flour with 1/2 tsp salt, and 1 Tbsp baking powder. Gradually add 1/2 C of cold water. Drop the mixture into the fricot a spoonful at a time. Cover and simmer for 7 min. DO NOT uncover until the 7 minutes have elapsed.

OMG. The risotto was so delicious.

We're heading over to my parent's house for dinner tonight, where we usually do German dinner. I started the tradition about 9 years ago for my first Christmas in my own apartment. The holidays with my family and my bf's family were so extensive, we would eat dinner probably 7 times over the course of 4 days, and all of them the usual Christmas ham, turkey, sweet potatoes, green bean casserole, etc. By the time I had dinner with my parents and my sister, the thought of more of the same made me want to puke, so I made weinerschnitzel, spaetzel, sweet and sour cabbage and apple dumplings that first year. My mom followed it up with rouladen and potato dumplings. Every year my mom and I take turns making an old recipe my grandma had hidden away.

Yup.

This is for 2 loaves. (I will give the exact recipe with my variations in parentheses.)

2 2/3c flour (I use 1/2 wheat and half white)
1t baking powder
1t baking soda
1/2t salt
(1t cinnamon)
2/3c butter, softened
1 1/3c sugar (I use 1/2c white and 1/2c brown instead)
2 eggs
(1t vanilla extract)
1 1/2c mashed banana (this is about 3 medium bananas)
1/2c sour cream
(1/2 a 12oz bag of peanut butter and chocolate chips)
(1c chopped nuts)
Preheat oven to 350. Grease two loaf pans. (The recipe wants you to flour the bottoms, but that never works for me.)

Sift together the flour, baking powder, baking soda, salt, and (cinnamon.) Set aside.

Cream the butter and sugar together until light. Add the eggs one at a time, mixing well after each addition. Add the banana and (vanilla), mixing well.

Add the flour mix in thirds, alternating with the sour cream, ending with the flour. Blend quickly, but thoroughly. (DO NOT OVERMIX!) Add nuts or chocolate chips here if desired. Pour into pans and bake for 45 minutes, or until the center tests done. (I always check at 35 and 45 minutes.)

Let the bread sit in the pans for 10 minutes before turning out onto a cooling rack. Loosen the sides with a bread knife if necessary.

I forgot to mention something about the banana bread. Most of you know this, but I am going to say it anyways... Wait till your bananas are almost black before using them for baking. The blacker they are, the sweeter they get.

I hate fish, but I've made this twice this week with different seasoning and loved it. I didn't even use any sauce to cover it up.

Fried White Fish

1 lb white fish- haddock, tilapia, cod, flounder, etc
1/2 c bread crumbs
1/3 c parmesan cheese
2 T blackened seasoning (or Greek seasoning or Cajun seasoning, or whatever you like)
a pinch of dill
mayonnaise
olive oil for frying, about 4-6 T
lemon juice

Cover the bottom of a heavy nonstick skillet with the oil. It doesn't have to be deep, just enough to reach the edges. Heat to about medium high. You don't want the oil to be smoking.

In a little bowl, mix the bread crumbs, cheese, dill and seasoning. Set aside.

Spread a thin layer of mayo on one side of the fish. Sprinkle the crumbs over it and repeat with the other side.

Fry in the oil for roughly 3-4 minutes per side. Crumbs should be brown and fish should flake when it is ready.

Allow the fish to drain on a paper towel lined plate for 1 minute before serving.

Sprinkle some lemon juice over the fish and serve hot.

I don't remember if I posted this in my cookbook thread, but I made it for dinner, so I'm posting it here.

Easy, Breakfast for Dinner Skillet

kielbasa, cut into bite sized pieces
4 medium potatoes, cut into bite sized pieces (scrubbed, but not peeled) (can be yukon, baking, red)
1 large onion, sliced
4 cloves garlic, minced
2 T olive oil + 2 T olive oil
blackened or cajun seasoning

In a glass casserole dish, toss the potatoes, 2 T oil, and seasoning. Cook on high in microwave for about 6 minutes. (If you have leftover baked potatoes from another night, you can skip this step, and fry them in the pan for a minute with the seasoning.)

Heat 2 T oil over medium high heat. Toss in the potatoes and cook for about 2 minutes. Add the onions and kielbasa. Cover and stir every couple of minutes until onions are almost transparent. Add garlic and cook for 1-2 more minutes.

Serve with scrambled eggs and toast.
