Ok, finally did this one this weekend. Good, though I'd experiment with types of beer used (I used Heineken this go around). It works like this.
Two pounds of Monterrey Jack, shredded...
One jar of Jalapeno Peppers
3/4 cup of fresh chopped Cilantro
Flour
Ok, shred the cheese. Then, mix it with a half a cup of flour, thoroughly.
Next, pour the beer into a deep saucepot or a crock pot. Bring it to a boil.
Add the cheese until it is well and truly melted and hot.
Then, add the ingredients and let it simmer until it is well mixed.
Enjoy with chips, fresh veggies. Also would make a good topping on certain meats and sandwiches, especially fowl.
