Deadpool - Johnny Knoxville if he could buff up considerably

Mr. Sinister - Billy Zane (Essex would shoot me if I said anyone else)

Forge - Benjamin Bratt

Mojo: Mike Meyers. Well he played Old Fat Bastard in his Austin Powers films.

Famine (One of Apocalypse's horsemen): Callista Flockhart or Lara Flynn Boyle. Both girls need to eat.

Deathbird: Courtney Love. Have you heard this chick sing? She's the posterchild for everything evil.

Selene, the Black Queen: Jennifer Lopez. Well the mutant witch knows to ensnare with her sorcery. I guess that's how she ended up with Ben Affleck for while.

Mimic: Fred Durst or Mark McGrath. Hey both these egotists don't have an original idea in their heads. Copycating wouldn't be an infringement.

Collin Ferrel would really look the part of Gambit. He's a master of the accent, so that could work really nicely. Just give him some red contact lenses and a brown trench coat et voilla!
