For Today, Friday, April 21, 2006, the Food of the Day is . . .
wait for it . . . .
Chicken Mole
Ah yes, the Mexican treat that is just absolutely amazing. I just had it for dinner and I am sitting here with a stupid, shit-eating, satisfied grin on my face.
Well, since I'm the first here on Saturday, April 22nd, I will share my lunch with you...
Sesame Chicken.
I don't cook lunch, so we often have Chinese food on Saturday afternoons.
I never liked Mole sauce. Too... brown.

And it's not nice to pick on moles just because they can provide a sauce, either.

English-Style Fish and Chips. I don't recommend it as an everyday meal, but a little indulgence once in a while is okay.
Anyone else here like vinegar with their chips? Or just us northern psychos...

It's just you Northern psychos:) Actually, I've had vinegar on chips and it's not bad... not my favorite, but OK.
Someone at work brought in some leftover tuna casserole for lunch the other day. It brought back lots of memories. My mother used to make it at least once a week. Now she says that she hated it! I think I'll make it for my kid.

My mother just did the same type of thing to me. I decided I wanted to try making stuffed green peppers, thinking that I couldn't possibly hate them as much as I did growing up, especially if I substituted the green peppers for red ones. (They turned out awesome!) So I called my mom, since she made them ALL the time, to ask her what she used to stuff them, and she told me she never made them because she hated them. What the hell is THAT??

BEANS AND FRANKS
Yes, the old rib-sticking and emission inducing wonderfood.
There are variations on this theme, such as using other kinds of beans, and different kinds of sausage meats, but I prefer just a couple of cans of Van de Camps baked beans, some cut up Oscar Meyer wieners, a dash of mustard and a tiny pinch of garlic baked in the oven for about 75 minutes at 325 degrees. And then I try to make sure any room I'm in is occupied by only myself, at least until morning . . . :)

Swordfish
I suspect most of the people who post here haven't ever had swordfish. It is the "steak" of seafood, believe me. I recommend cooking it on a grill, but that isn't as important as making sure the meat is really fresh. Swordfish marinates well, so you can be creative with that if you wish.

That's also true in the way that you don't want to overcook it, or else it will end up quite dry. I usually recommend swordfish to people who usually don't like seafood (tuna is another option).

Food of the Day for Tuesday, April whatever this is:
Teriyaki chicken stir-fry, with snow peas, cabbage, and rice
Something about snow peas and cabbage just works when you stir fry them with chicken in teriyaki sauce. I am drooling just thinking about it. You can add other ingredients to taste if you don't like snow peas and/or cabbage.

Today's food is healthy and yummy and my breakfast this morning:
Buckwheat pancakes with blueberry sauce
The blueberry sauce is actually 1 cup of frozen blueberries, with 2 Tablespoons of blueberry all-fruit (no added sugar), microwaved until warm. Yum!

Poor Man's Lasagna
Just take a bowl of cooked macaroni, mix in ricotta cheese,
smother with spaghetti sauce, and top with shredded mozarella.
Pop into microwave for 4 minutes, and BAM! :D

Ok, for today, Wednesday, April 26, the food of the day is:
Marinated Filet Mignon w/baked potato and spinach
Yes, the emperor of beef cuts is better prepared after marination, as I have not found the flavor of filet's to be as good as say a T-Bone, but you can't argue with the tenderness. I prefer using a tomato, garlic, onion and basil based marinade, or a store bought BBQ sauce (I like KC Masterpiece, but there are probably better ones). I like spinach and potato as the sides with my filet, but feel free to use what you might prefer.
Also, do not cook the steak on the BBQ, saute it in a small bit of butter. Cook the spinach in the same skillet after the steak is done. Don't cook the spinach and steak together. I say don't use the BBQ because the marinade pieces of tomato and onion would fall through the grill. However, if that doesn't matter to you, go for the BBQ.

I knew there was a food thread here in the lounge....because tonight I am floating with a plate of Chicken Mole and Rice and Vegetables. :o
Next to Japanese food (namely, sushi!) this has got to be a favorite, but it's a much rarer occasion than sushi, which is at least once a week. :D
